1kg young goat cut into pieces
5 peeled tomatoes
Parsley and rosemary
Salt and pepper
Remove fat from the goat and put
the pieces into a recipient, add a bit white wine and set aside for approx.
Peel and cut a the potatoes.›
Remove the goat from the wine, wash
and cut it, putting it into in a baking dish.›
Season with the oil, salt, pepper
and rosemary turning the meat over with your hands, so it becomes flavoured.›
Place the goat pieces in the baking
dish, and cover with the peeled tomatoes mashed with a fork; add a drop
oil on top of the parsley and put to cook in a 200° oven, turning the
pieces over now and then.
Meanwhile put a frying pan to heat
with the olive oil, a clove garlic and a branch rosemary. When it is very
hot fry the potatoes till they are half cooked. Drain well. When the goat
it is almost ready add the potatoes› and finish cooking in the oven, basting
with the sauce.
